My Great Grandmother's Beet Salad Recipe
My great grandmother was known for her Swedish cooking, which she learned from her mother who voyaged to Sycamore, Illinois from Istaby, Sweden, at the tender age of 16, all by herself.
You may not think of a beet salad as a loved dish, but she recalls having to mix up another batch in the middle of the meal because she ran out.
Grandma Stroberg's Beet Salad
- 6 cans or 8 cups of whole, cooked beets
- 6 medium tart apples
- 1 large onoin
Grind in a meat grinder (or food processor today), and add:
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 tbsp sugar
- 1/4 cup vinegar
- 1/4 tsp pepper
- 1/4 tsp allspice (I add a touch more. You can substitute nutmeg if you'd have allspice)
