Garlic Scape Recipes

The infamous garlic scape. Here are some recipe ideas for garlic's fun, little gift.


Garlic Scape Pesto


- 1 cup nuts of choice (cashews, pine nuts, sunflower seeds)

- 1/2 cup oil of choice

- 2 cups of roughly chopped garlic scapes (green part only)

- 1 teaspoon of nutritional yeast

- 1/2 tsp of salt

- 1/4 tsp of pepper 

- 1/4 cup parmesan (if desired)


Blend all ingredients in a food processor, and enjoy! Refrigerate up to one week, or freeze for 3-4 months.

Fermented Garlic Scapes


- Scapes to fill one quart 

- Pickling salt

- Filtered water

Quart jar and fermenting top


Place your scapes, including flowers, into the jar. Cover with brine mixture of 1/2 cup of salt per 1 gallon of water. Top with fermenting lid, and leave at room temperature for 3-4 weeks. Add a little brine if needed. It will be ready once the scapes lose their bright green color. Store in refrigerator. 

Garlic Scape Salt 


- 12 fresh garlic scapes

- 1/2 cup sea salt 


Preheat oven to 250° F and chop scapes. Place into a food processor with your sea salt, and process until it looks like a paste (or your pesto!). Spread the paste in an even layer on a small baking sheet. Place in oven and allow to bake for 1 hour, stirring every 15 minutes or so.

Once cooled, crumble the dried salt and garlic scape mixture into fine pieces. Store in jars in a dark, cool place.
