Basic Roast Recipe

We all know that you need to cook grassfed meats less time, and probably at a lower temperature, than their corn-fed counterparts. Read up more on that here. 

Here is my basic roast recipe. You can sub in different spices, and of course add more time or less as the poundage differs for your roast.

Basic Roast Recipe


- 1 cup of bone broth or filtered water

- 1 grassfed roast (2-3 lbs), thawed (although I have totally done this when it wasn't totally thawed and it turned out just fine)

- 1 teaspoon each dried (or 1 tablespoon fresh) of your spices of choice: thyme, rosemary, oregano, sage

- 1 bay leaf

- 1/4 teaspoon each of paprika and nutmeg

- 1 teaspoon each of sea salt and fresh ground pepper


Bring a dutch oven to medium heat on the stove (feel free to add some butter or tallow if yours isn't well seasoned). Once heated, sear your roast on each side for 2-3 minutes. Remove from heat, and add your broth/water and spices, coating each side. Cover, and cook in oven at 250 degrees for 6 hours (take out at 5 hours to test temperature). Shred with fork, and serve over rice, mashed potatoes, with veggies, or in tacos!
